Sweet Potato Casserole


  • 5-6 sweet potatoes, cooked and mashed
  • 1/2 cup sugar
  • 1 egg
  • 1/4 cup butter, melted
  • 1/2 teaspoon cinnamon
  • dash of salt

Topping:

  • 1-2 cups coarsely crushed Ritz crackers (1 or 2 sleeves)
  • 1/2 cup brown sugar
  • 1/4 cup butter, melted

In a large bowl, combine sweet potatoes, sugar, egg, butter, cinnamon, and salt. Pour into a greased 8×8 inch pan. Combine the topping ingredients and sprinkle over sweet potato mixture.

Bake, uncovered at 350 degrees for 20-25 minutes.
