Fish Tacos


  • 3 filets tilapia (diced into large chunks)
  • 6 small flour tortillas
  • 1/2 cup shredded cheese
  • 1/2 cup shredded cabbage
  • fresh diced tomatoes
  • a bunch of cilantro
  • Chipotle Ranch dressing

Blackening seasoning:

  • 1 tablespoon paprika
  • 2 teaspoons dried Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon minced onion
  • 1/2 teaspoon pepper

Mix the blackening seasoning and place in a Ziploc bag. Toss the fish chunks into the bag and coat evenly. Spray a skillet with cooking spray and cook fish over medium heat until flaky (4-5 minutes on each side). Serve in warm tortillas and top with cheese, cabbage, tomatoes, cilantro, and dressing.
