- 4 large baked potatoes
- 2/3 cup butter (I used 1/3 cup butter and 1/2 cup bacon grease… mmmhmm. Yes I did)
- 2/3 cup flour
- 6 cups milk
- 1 teaspoon pepper
- 4 chopped green onions
- 12 slices of bacon, fried and crumbled (I use ham sometimes too)
- 2 cups shredded cheddar cheese
- 1 cup sour cream
After microwaving the potatoes until done, dice potatoes into bite size pieces. Melt butter (and bacon grease if you like that sort of thing) in a large stock pot. Add flour. Gradually stir in milk and continue to stir until thick, smooth, and bubbly. Stir in potato pieces, onions, bacon (or ham), and cheese. Cook until heated. Stir in sour cream. Let the soup simmer on low for awhile – can be a crock pot recipe or just 15 minutes!
Wowza this is the best potato soup I’ve eaten. Thank you Lauren for sharing… I really didn’t know potato soup could be so delicious!
