- 4 large baked potatoes
- 2/3 cup butter (I used 1/3 cup butter and 1/2 cup bacon grease… mmmhmm. Yes I did)
- 2/3 cup flour
- 6 cups milk
- 1 teaspoon pepper
- 4 chopped green onions
- 12 slices of bacon, fried and crumbled
- 2 cups shredded cheddar cheese
- 1 cup sour cream
Cut potatoes in half and scoop out pulp. Melt butter (and bacon grease) in a large stock pot. Add flour. Gradually stir in milk and continue to stir until thick, smooth, and bubbly. Stir in potato pieces, onions, bacon, and cheese. Cook until heated. Stir in sour cream. Let the soup simmer on low for awhile – can be a crock pot recipe or just 15 minutes!
