- 1 roll of sugar cookie dough
- 8 ounces cream cheese (I use neufchatel cheese)
- 1/2 cup sugar
- 1 teaspoon vanilla
- Various fruits (strawberries, blueberries, kiwi, mandarin oranges, pineapple, watermelon, whatever you like)
- 2 tablespoons apricot preserves
On a greased pizza stone, roll out the dough to a thickness of about 1/4 inch. Bake the crust as directed on the package, until golden brown.
Meanwhile, mix together the cream cheese, sugar, and vanilla. Spread the cheese mixture over the cooled crust. Top with fruit and drizzle preserves on top. Slice like a pizza and serve.
