Cinnamon Rolls

For the rolls:

  • 1 1/3 cup warm water
  • 1 packet dry yeast
  • 1/3 cup sugar
  • 1 teaspoon salt
  • 2 eggs
  • 4 3/4 cup flour
  • 3 tablespoons melted butter
  • 2/3 cup cinnamon and sugar mixture
Combine water, yeast, and sugar. Let the mixture sit until foamy. Combine all other ingredients (except butter and cinnamon and sugar mixture) and add water mixture. Mix until dough forms. Knead for 10 minutes and then let dough rise for 1 hour in a heated, covered bowl.
Pound dough down and roll out onto a floured surface. Roll into a 9 x 20 inch rectangle. Spread melted better onto rectangle. Roll (like a jellyroll) flattened dough tightly from one end to the other and pinch the edge of dough to seal. Cut into 1.5 inch slices.
Place rolls on a cookie sheet and let them rise for 1.5 hours. Bake at 375 degrees for 15 minutes.
Frost with icing (mix the following together):
  • 2 cups powdered sugar
  • 1/2 teaspoon vanilla
  • 1 ounce cream cheese
  • 1/2 cup milk (give or take)
