Salsa (Tomato; Black Bean and Corn)

Tomato Salsa:

  • 1 can chili ready (or fire roasted) tomatoes
  • 1/2 onion, chopped
  • 1 garlic clove
  •  cilantro to taste (1/2 cup-ish), chopped
  • 1 tablespoon red wine vinegar
  • 1 tablespoon lemon juice
  • 1/2 small can tomato paste
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Mix all ingredients together and use a stick blender to puree to desired consistency.

(compliments to Dad for inspiring this recipe. It has a bit of my own twist from his original!)

Black Bean and Corn Salsa:

  • 1 can corn, drained
  • 1 can black beans, drained
  • 1 cup salsa
  • 1 tablespoon red wine vinegar
  • 1 clove garlic
  • 1/2 tablespoon lemon juice
  • 1/2 teaspoon chili powder, salt and pepper

Mix all ingredients together. Serve with tortilla chips.
