Breakfast Casserole

  • 2 pounds ground sausage (browned and drained)
  • 6 eggs, beaten
  • 1 can cream of mushroom soup
  • 1 tablespoons mustard
  • 1 13oz can evaporated milk
  • 1 pound shredded cheddar cheese
  • Croutons

Mix eggs, soup, mustard and evaporated milk. Spray 9 x 13 pan with cooking spray. Spread sausage in pan; top with cheese. Pour egg mixture over all. Sprinkle croutons on top. Bake uncovered 325° for 45-60 min. until eggs are set. You can prepare this recipe the night before and refrigerate it, just don’t put the croutons on until just before you bake it.
