So I was getting pretty fed up with making waffles that were hard and crunchy. Usually made from store bought pancake mix, they just are never really completely satisfying. I’ve been on the hunt for a good quality waffle recipe, and I think I’ve finally found one that qualifies! The secret? I think, regretfully, that it has something to do with the dreadful beating of egg whites, but my forearm muscles will probably get huge before I stop beating egg whites, if it means I get to eat light, soft, crispy, delectable waffles!
